Pan fried chicken with mushrooms and orange

Hi i found this old recipe i cut out of a magazine which is lovely, extremly healthy and only 3 points per serving (discovery plan)!

Serves 4

1tbsp olive oil
4 chicken breasts (skinless)
1 onion (peeled & chopped)
2-4 garlic cloves (peeled & chopped)
225g / 8oz mushrooms (peeled & chopped)
15oml / 1/4pt orange juice (pure/fresh)
200ml / 7fl oz chicken stock (or 2 stock cubes)
1tbsp clear honey (optional, but included in the points value so why not?)
salt & pepper to taste


Use a normal frying pan and heat oil and sautee onion & garlic for 3 mins.
Add chicken and cook for 3 mins on both sides (until lightly browned).
Add mushrooms, orange juice, stock and honey.
Bring to boil then reduce to low heat and cover with a lid or piece of tin foil.
Simmer for 20mins or until chicken is thoroughly cooked.
Add salt and pepper to taste.

Serve with either rice, pasta or parsley potatoes and fresh veg! :gimi:
