Chicken Tikka Masala and Basmati rice.

This is a weight watchers recipe which is delicious!!! This recipe serves 4 with a pro point total of 12 per serving, including the rice.

INGREDIENTS:


550g chicken breast - diced
1 red chilli - sliced and deseeded.
15g fresh ginger, peeled and diced
1/2 tbsp garam masala
1tbsp each of turmeric, ground corriander and cinamon.
1tbsp tomato puree
1 tbsp olive oil
2 sliced onions
20g fresh corriander
400g tinned tomatos
200ml chicken stock
250g basmati rice
200g weight watchers creme fraiche.

METHOD:

1. Blitz together the chilli, ginger, spices, corriander, tomato puree and 4 tbsp water with a food processor to make a paste.
2. MArinate the chicken with the paste for 30 minutes.
3. Fry onions for 5 minutes until browning. Add the chicken and fry for a further 5 minutes.
4. Add the stock and simmer for 30 minutes.
5. cook rice according to packet instructions.
6. Remove curry from heat, put 1 tbsp curry sauce into creme fraiche and mix in, then put all creme fraiche into curry and stir through. Heat through for a few minutes to reduce if you wish to.
7. Finally, serve and enjoy!!!

In my opinion this was delicious and I will defo be making it again! :D

Hi there, thanks for your replies, I hope when you try this dish you enjoy as much as i did! I do have another curry recipe, though I havent yet tried it myself so dont know what it is like. Here goes...

Chicken Pasanda 8 pro points per serving. Serves 4.

1 onion - sliced
2 garlic cloves crushed
500g chicken
1tbsp mild curry powder
1 veg stock with 400ml boiling water
25g desicated coconut
25g ground almond
150g greek yogurt
15g flaked almond.

1. fry onion and garlic for 5 minutes, add chicken and fry for further 5 mins.
2. stir in curry powder and corriander.
3. pour on stock and coconut and almonds and heat until boiling. Reduce heat and simmer for 20 mins.
4. Spoon in the yogurt and stir. Heat gently and serve.

Add rice for extra points.

If anyone has a bash at this let me know what its like please, as like I say I havent yet tried this one.

Tried the tikka masala and have to say it was fantastic. Best home made curry ive made. Completely forgot the creme fraiche first time and was still lovely.

Going to have to try the pasanda at some point that looks awesome too.

Great recipe! I love indian food but struggle to find a list of pro point values specifically made for indian food. Do you know if there is a list available with the pro point values? I would appreciate it. Thanks
