Attack Chicken - how do you eat yours

I am quite enjoying my chicken at the mo - but the whole one I roasted myself seems very dry.

Not sure if I cooked it a little bit too long - or whether its just because I am used to lashings of something fattening with it. I am craving Branston pickle which I don't even like much!!

I am making a soup/broth with the last of it today - but any suggestions for future attack/PP days?

I poach a whole chicken in water. That way it is lovely and moist. I use the meat as it is, or curry it, make soup, reheat with soy sauce, garlic and ginger. With the juices I cool it, skim off the fat, and use the stock either in soup, or the dogs have it to moisten their biscuits. They also get the bits of fat, gristle and skin off the bird. They are loving Dukan too!

Don't forget, if you are roasting, to place it in the pan breast down for first 3/4 of the time - makes it much juicier. Poaching in water makes it the most juicy though.
