Puddings Mandarin Cheesecake

I love cheesecake and I've used this recipe for years not realising how low in syns it was - apart from the classic biscuit base of course!!

But I've adapted it to be low in syns to serve at a dinner party!
Cut into 8 and 1 slice is just ½ HexA and less than 1 syn per portion!

INGREDIENTS
Large tub of low fat cottage cheese (not sure of UK size - but about 250 g) (FREE Food)
270 g tub Philly Light (approx 4 HexA's)
4 tbls water
2 tbls granulated Sweetener - adjust to your taste (FREE Food)
250g tin mandarin oranges in fruit juice - not syrup (approx 5 syns per tin)
1 packet gelatine (approx 15 gm) (FREE Food)

METHOD
1. Beat together the cottage cheeseand Philly Light. I usually do it in a blender!
2. Strain juice from oranges into a small basin suitable for steaming over a pan and add 4 tbls water and the sweetener. Add 1 packet gelatine powder and heat over boiling water until dissolved.
You will need to adjust the sweetness depending on your taste but I normally don't put any in at all as I like it fresh tasting.
3. Stir into the cheese mixture.
4. Line a removable base cake tin with baking parchment or greaseproof paper - it just makes getting the cheesecake out much easier.
(I use a 10" tin as I like the cheesecake fairly thin. But if you like it deeper then use an 8" tin)
5. Put a "base" into the tin (see below).
6. Arrange the orange segments (reserving some to decorate the top) on the base and then pour the cheese mixture carefully over - try not to disturb the segments too much.
7. Leave to set in a fridge for 2-4 hours.
8. Remove from tin, and remove paper to serve.
9. Decorate the top of the cheesecake with about 12 reserved mandarin segments and some finely decorated chocolate - just 1 segment of Terry's chocolate Orange is enough, only problem is you have the rest of the orange left to eat!

Cut into 8 to serve - an 1/8th makes a good sized portion.

THE BASE
The classic base is obviously crushed digestive biscuits set with butter but this is about 15 syns per portion !!! :cry:

So I tried the 1/2 Syn Roulade.
Make the "cake mix" in a swiss roll tin and let it cool. Then, using the removable base of the cake tin as a guide, cut out a round and line the cake tin with this as the base for the cheesecake.

My dinner guests enjoyed it (even though it wasn't my usual biscuit base that some of them had seen before) and couldn't believe that it was allowed on ANY diet!
