JUst had a spag bol with peppers, mushrooms, herbs, garlic, mozzerella! Must admit i really enjoyed it and best of all- it was all Free apart from the mozerella!! I enjoyed trying new things so was wondering about other bits like butternut squash- aubergines etc can anyone tell me what they are similar too please?! Much loveeee xxx
 
Butternut squash is similar to pumpkin, but you can boil, roast or bake it. I usually cut it in half, scoop out all the seeds, stuff it with mushrooms and garlic (all raw at this stage), wrap it in silver foil and bake it in the oven @ 180 until it is soft to touch all over.

Aubergine is a bit hard to describe, and I confess that I don't like it, but I use it when I'm making my bolognese sauce, as if you don't have a lot of mince, you peel the aubergine, cube it and add it to your sauce, I usually let it disintegrate, it makes the bolognese go a lot further and disguises the aubergine, and you add all your usual ingredients.
