I'm having a night in tomorrow with my friend, watchng a dvd and having some wine. We are gonna have a little tapas picnic too, I've got some jalepeno stuffed olives and asda do a nice meat selection with serano ham, chroizo and lomo. What else could we get? It doesnt have to be spanish, just picky finger food stuff.

How about some mini meatballs, some king prawns cooked in butter and garlic, some fried or grilled halloumi cheese, or some mixed nuts?

Here is a recipe for Albondigas, which are spanish meatballs served as tapas. Ive cooked these several times recently, and everyone loves them.

This recipe makes about 40 smallish sized meatballs, so halve or quarter the recipe to make fewer. Not sure how Atkins friendly they are though.

250g minced beef
250g minced pork
season with salt and pepper and a little pinch of oregano, or basil. Squeeze the minced meats well together then take about a walnut size (or slightly larger) amount of the meat and roll into a ball. I then roll the ball in flour, but you could omit the flour. Flatten each ball slightly to help them cook through more evenly. Fry about 10 or 12 at a time in a little olive oil for 10 minutes or so, turning them over every now and then. If they dont cook all the way through, dont worry as you will cook them again.

Drain the meatballs and put aside while you cook the rest in batches, then when they are done, into the oil and juices left in the pan add 1 large finey chopped onion, a couple crushed garlic cloves and fry gently till soft, add some sliced mushrooms (say 8 to 12 mushrooms sliced up) a pinch of chilli flakes and a bottle or jar of Passata. ( In Spain you can buy Tomate Frito in tins and jars, but ive never seen it in the UK, but Passata is a good substitute) Add salt and pepper to season, and here I add about 2 teaspoons of sugar, but you could add a little sweetener, simmer together for 5 minutes or so, then add the meatballs back in and simmer gently for about 10 minutes.

About 3 or 4 meatballs with a little sauce makes a nice small tapas per person, and if you dont eat the rest it will freeze very well
 
Whenever we fancy a spanish tapas lunch we also add
Marinated anchovies (from waitrose)
Crustless quiche (see recipes sticky)
