Working Solutions Courgette and Prawn Omelette

I made this last night and it was massive. Way too big really but I did my sums and apparently its ok! So ...

mushrooms 50g sliced or chopped
grated courgettes 50g or 100g (I used 150 which was waaaay too much) Drain as much water out as poss.
prawns 50g - leave whole or chopped.
olive oil - 1 teaspoon
eggs - 2 medium
light cheddar 30g (the one I used had 0.4g carbs and 95 cals for this portion)
herbs - whatever you like. I used fresh greek basil
spring onions 15g
rocket 25g to serve
soy sauce if you want on the side
salt/pepper to taste.

This will come to about 400 calories and less than 10g carbs.

I fried the mushrooms and prawns in a bit of water (so boiled really lol) in my frying pan. Put to one side.

Mixed together the eggs, courgettes, herbs, cheese, spring onions. You can mix in the prawns and mushrooms at this point too if you want - I put them on after.

Heated the oil, then chucked in the omelette mix, spreading it evenly around the pan. Let it set as much as poss. If its a bit soggy because of the courgette, and you can't turn it over once the bottom is cooked, then bung the grill on and stick the pan under there instead until it starts to brown.

If you havent done it already, throw on the prawns and mushrooms, and fold your omelette, cook for a little while longer if necessary.

Serve with rocket and if you like sprinkle some soy.
