Ive seen some fab recipes on here so I thought i'd share one of mine with you

Not sure if its been done, but I have a recipe for a lentil soup which can be used as a starter

Please feel free to make any alterations as I am only just starting sw and hope that its good in ingredients for us

possibly serve 4/6 people depending how much is served for each person

Ingredients:
Frylight
1 large onion - finely chopped
2 cloves of garlic - crushed
1 fresh green chilli - chopped
1/2 tsp turmeric
1/3rd of a cup of split red lentil
(remember to wash lentils)
1 cup water
salt - your taste
fresh lemon juice - your taste
1 tin of canned tomatoes - chopped
1/2 tsp sweetness and light sugar
1 cup plain boiled rice or you can use 2 boiled potatoes - chopped into chunks
for a garnish use chopped corriander

Method:
Using a saucepan (or you can use a wok), spray with frylight, start to cook the onion, garlic, chilli and turmeric, when the onion goes clear, add your lentils and water, bringing to the boil, reduce your heat and cover and cook until all the water is absorbed. Mash the lentils with the back of a wooden spoon until you have a smooth paste, add salt to your taste and mix well. Add the remaining ingredients and re-heat the "soup" Its a this point that you can add either the cooked rice or the chunked potatoes to add body to the soup, use some fresh corriander to garnish

Enjoy x
