Cruise PV Shepherds/ cottage pie

I'm a student so used to make this a lot as it does me a few dinners and is pretty cheap. I've made it now with carrot and parsnip mash instead of potato!

Lean mince with onions and garlic and tomato purée, a stock cube, all cooked up , placed on a dish with the vegetable mash on top, and ten minutes in the oven@ 200.

I made it family sized and have a quarter at a time, and just reheat it.

Was really craving something hot, as was having salad all the time due to the hot weather.

Hi, Great recipe, it's certainly good if your on a budget or not, however don't use parsnips as mash, as there are not on the list as they have a high sugar content. I do mine with mashed swede or celeriac, mashed with a little skimmed milk. Bliss!!!;)
 
Absolutely. Use cauliflower, swede or celeriac, rather, for your mash.
 
Or use mashed Butternut Squash - my favourite topping for this kind or recipe!
 
Still haven't found your butternut squash... but I love the sound of its name even!
