Lunch ideas? STRUGGLING!!

Hi all,

Really hoping someone will be able to help me - I seem to be in a bit of a rut at the moment and need some inspiration to get out of it!!

So the problem is my lunch while at work. My breakfast is fine; I have either Dorset Cereals Simply Fruity Muesli or a bowl of Special K. Dinner is fine as well, my OH is quite healthy so we have salad most nights (either chicken, tuna or salmon). The problem is lunch at work. I have had a look on some websites for quick lunch ideas, but they all take far longer than I can spare to make!! The problem is, because I don't know what to have, I usually end up having another bowl of special k (so by lunch I haven't had much protein). I am then starving when I get home, and so wolf down my salad, and lots of snacks straight afterwards to fill myself up!

So any easy lunch ideas (i am not adverse to making things that take less than 10 mins, but anything longer than that just isn't practical), and interesting snacks would be appreciated. My snacks at the moment mainly consist of apples or bananas, but I find I'm getting
Retry bored of these.

You could get some soup to warm up or make some pasta with quick cook pasta or something? I'm on MFP. Username is bostik :)

Or make yourself a sandwich, roll or pita bread. I've got a couple of those clip top food containers and take a salad with me if I know it's going to be a busy day. If your making salad in the evening just make a bit more and pop it in the tub. Take a roll or pitta with you as well and you could pop the salad in them :).

One of my favourite snakes are almond (grammar??):eek: Don't have to many but they give you an energy boost.

Good idea littlesis, will have a root around in the cupboard for some appropriate tupperware!! :)

Sarah, I always though sundried tomatoes were in oil and so not that good for you? Great to know that they are ok, I LOVE them!!

Any more ideas much appreciated!!! And user names on MFP!!xxx
 
If the sundried tomatoes don't come in oil they're often really salty (the salt preserves them, I think). I like to soak the salty ones in hot water for a few minutes to get rid of some of the salt, otherwise I'm thirsty for hours after eating a handful or two.
 
A whole tin of dolmades is only something like 380 calories and REALLY filling and decadant :)
 
Make an extra portion of dinner and fridge it for the next day? That's what I do for my daughters lunchboxes? Or bung some pasta on to boil while dinners cooking and fridge that for the morning? Then it's just a case of throwing a can of tuna in or chopping some ham and your pretty much good to go? I think a good protein fix at lunch is important!! If I don't get one I'm picking at everything till teatime. I have a freind who has a meal replacement shake every lunch as she's that busy she doesn't get to make anything most mornings!!! Seems to work for her. She's convinced the extra nutrients are making her skin better too lol.

Or try couscous? That's very simple an quick to make? I love couscous :) make it with some fresh herbs and veggies and add a can of mixed beans or chicken or prawns? It's just boiling water or stock poured over to cook so you could take your ingredients to work dry and make it there!!!

I must admit, lunches were EASY when I was doing SW. Just make extra from the night before, or have a wholemeal sarnie, or a baked tattie with beans or tuna. I practically lived on pasta salads at lunch, and or dry fried egg rolls (Two eggs per roll!). Now I'm doing CC I can't get my head round how such calorific stuff can be 'free' on SW!? And lunches are a little trickier to do now. I generally use ready meals at the mo, so I know the exact calorie content - I couldn't trust myself with rice or pasta meals at the mo ;)

Lol just don't eat pasta or rice inless you weigh it yourself!!! Wholewheat pasta is a lunch fave of mine at the mo. It's really yummy cold but I only use 33g dry weight (bout a handfull of fusilli) and bulk out with salad veggies.

Liking the idea of cous cous or wholemeal pasta, I think I might buy some cous cous this weekend!! Today I had the wrap that xsarahx suggested...... It was LOVELY!!! Really recommend trying it!!! Am going to stick to the wraps this week (mainly as I have loads to use up now!!!) but think cous cous ir pasta may work next week!!

It's a problem when an extra 100g just accidentally falls into the pan I admit!!! lol But hey it's wholewheat so it's still good for ya!!!
