LOADS of great sauces for fish!!!
1 - smear the philly on your barely cooked fish, sprinkle with fresh herbs, whack under grill for a few minutes, GORGEOUS!
2 - Make a parcel out of some foil, put your fish in it with a spoonful of good vegetable stock, herbs, dash of Tabasco to taste - natural gorgeous juices when your fish is cooked, or you can throw the juices into a saucepan, plop a splodge of natural yoghurt or your philly or quark in there, lovely creamy sauce!
3 - Buy smoked cod, poach it in milk, reduce the milk down, add some salt and pepper to taste, spoon of quark or fat free yog in there, LUSH!!!
There are loads of lovely ways on a PV day too - I LOVE to cook salmon in a foil parcel with the veg I want to eat, it's especially lovely with leeks, spring greens, broccoli florets, asparagus etc. The juices can be thickened with yog or quark if you like, but I love it just reduced down with a good seasoning.
