Made this up last night so I could portion it off for the freezer and it was absolutly georgiouse...
3 peppers
2 large onions
2 large courgets...Chopped and bunged in the oven till soft. I added a few herbs and spices of choice as well.
For the sauce for the veg, I used 2 tins of tomatoes, simmered down to very little also herbs and spices, very healthy dolop of Marmite and some garlic, then thickened it up with a carton of passata and left it to cool, once cool added 3/4 of a tub of quark to make the sauce creamy. I finely diced 1 large chicken breast and pan fried it in fry oil then added it to the creamy veg mix.
There was enough sauce left over for the top of the lazagne so diddnt need to add a cheese sauce, (although if you do, I have been recomended Morrisons own at 5 syns a pack)
I then added 2 packs of Light Mozzarella cheese, which devided between the portions will count as my Hexb for that day.....
