Ingredients:
8 digestive biscuits
28g low fat baking margarine
2 sachets red sugar free jelly crystals
200g quark
1 raspberry & cranberry mullerlight
Fruit to decorate
Base:
Smash up biscuits with rolling pin. Heat butter in a pan and add biscuits once melted. Place in loose bottomed cake tin and press evenly across bottom. Chill in fridge to harden.
Topping:
Make the jelly up as per packet - place both lots of crystals together though don't do two separate.
Place quark and yoghurt in a large bowl and pour in jelly mixture and whisk until quark separated. Pour over biscuit base and place in fridge to set.
Decorate:
Add fruit to taste
