Green Day Potato Rosti Cake-thing

Hello,

Long time lurker, first time recipe giver!

Hopefully free on a green day using a HEX and syn if you use oil instead of fry light. I love this as a weeknight easy recipe but could easily be used as a breakfast dish!

Potato rosti cake-thing.

Ingredients
2 Large Potatoes
1 Small Onion or 3or4 Spring Onions
1 Egg
1 HEX Cheese (I use Low low)
Salt and Pepper to taste.
Frylight (or a little olive oil if you, like me, cant get on with the stuff! syn the oil)

1 - Grate the potato into a clean teatowel and twist till no/very little water comes out, this make take a while but its definately worth it!
2 - Finally dice onion and add to potato in a bowl.
3 - Add beaten egg to the mixture along with S&P to taste (can be a little bland without) and mix.
4 - Add mixture to medium hot frying pan (about plate size) and flatten to about 1 or 2 cm thick pressing down hard to compact.
5 - Brown off one side, usually takes between 5-8 mins and flip, using a plate if you find it easier.
6 - Once t'other side has browned use a spactula to divide into halves.
7 - Sprinkle HEX cheese onto one side and place the other half over it making a two tier "cake" in a semi circle shape.
8 - Keep in the pan but off the heat until the cheese has melted a little and then serve with a nice big salad!

So there it is. Mark's Potato Rosti Cake Thing!

Yummy, I think I will try that for brekkie over the weekend. Grilled bacon and a fried egg on top would round that off nicely.
 
I usually serve it either with scrambled eggs and beans (go the full way and add quorn sausages etc), or with a big fat salad with some home made honey mustard dressing (made with sweetener, I usually put aside "A few syns" for it as I have never bothered to calculate it). I dont see why you couldnt save the cheese from the inside and top it like a pizza. There are lots of things to serve it with.

The best tip for it is to squeeze as much water as humanly possible out!

I was always daunted about rostis/hash browns as I assumed they took ages to soften the potato but was surprised how quick and easy it is to cook! My OH (not on SW) pretty much nudges me awake most weekends requesting I go make this for her! cheek.
