extra easy BBQ time :):)

hi all , im having a bbq this weekend and would be very grateful for any recipes if u could post them on here . and hopefully this will give other people some ideas too :)thank u (now just fingers crossed for the weather :) )
 
I marinate lamb in red wine vinegar and mint and then bbq it. Chicken breast is also delicious bbq'd with the syn free bbq sauce in recipes section
I love bbq'd sweetcorn sprinkled with butter buds
ww sausages........

me 2 just usually it was pre bought stuff from supermarkets before started sw !:) hence y im looking for recipes:)
how many syns are the ww sausages do u know plz?
and butter buds??what r these never seen them b4!
 
The ww sausages are 1/2 each I believe, and are very nice actually (best of all the low fat ones I have tried)

Butter buds are sachets of dehydrated butter - you buy them from Lakeland and they are also 1/2 syn each. Great for when you want a buttery taste!
 
Corn on the cob
Sausages (go to joessausages.com for syn free sausages!)
Steaks (marinate in garlic, all purpose seasoning, s&p, mustard, Worcestershire sauce)
Chicken drumsticks (blend all purpose seasoning, s&p, garlic, 4T ketchup, Worcestershire sauce, 1T honey, chilli powder, paprika, splash of water and use to marinate 12 drumsticks)
Chicken wings - same as above (wings with skin are only 1 syn each!)
Prawns (s&p, lemon juice)

You can also make lots of different salads like potato salad, pasta salad, a big leafy salad, tomato mozzarella salad, chopped salad with sweetcorn! And lots of fresh fruit with bowls of sweetened 2% Greek yogurt to dollop on top! Yum :D

....never heard of the shop lakeland but sounds like gr8 idea :) il defo have try the weightwatcher sausages then :)

thank u honeyoc some gr8 ideas there :) ye i looked at that joes sausages before i was just a bit put off coz someone said u had to spend like 60pound minimum which thought was bit much at one time
 
There are several stickies in summer recipe sub-forum all about BBQs so I would take a look there for inspiration.

Oh no, not at all. It's a minimum of 8 packets, I only spent £20 or so.
 
Has anyone got the recipe for the Thai Chicken cakes from the new Extra Easy book, tried them last night in group (they are just spicy chicken burgers, so tasty, want to do them on my BBQ tomorrow but can't find the receipe anywhere...

Here it is.

Serves 4 (makes 12 cakes)

Ready in about 25 mins.

4 large skinless and boneless chicken breasts, roughly chopped
2 garlic cloves, peeled and crushed
1/2 / 1cm piece fresh root ginger, grated
6 spring onions, finely chopped
A large handful of fresh coriander ( leaves and stems) chopped
A large handful of fresh mint leaves finely chopped
1/2 lemongrass stick, finely chopped
Finely grated zest and juice 1 lime
1 red chilli, deseeded and chopped
Salt and freshly ground pepper
Fry light

To serve.
Cucumber and carrot ribbons (use a veg peeler or mandolin) with thinly sliced red onion drizzles with lemon juice.

1. Preheat your oven to 220c/425f/gas 7. Blitz everything for the chicken cakes (apart from the fry light) in a food processor until the chicken is finely ground and everything is well mixed. Divide the mixture into 12 portions and shape into small cakes.

2. Spray a large non-stick frying pan with fry light and cook the chicken cakes over a medium heat for 3-4 minutes, turning once. Transfer to a non-stick baking sheet and cook in the oven for 6-8 minutes. Serve immediately with the salad on the side.
