HI all,
I have bought a tub of Xanthium gum to use as a sauce thickener, but there are no instructions. How much would you use to thicken a pint of fluid? gravy consistency.
or to thicken 1/2 pint of cheese sauce.

I've only tried it once. The advice i was given and used was - add it in very small doses at the end once off heat. It thickens up pretty fast!

Actually haven't bothered use it since - usually use double cream instead now:)
 
Xanthan gum is very concentrated, so a little really does work
