Souffle omelette

Gone a bit quiet
Any one ever tried these? My ma used to make savoury ones for as as kids.

Two eggs separated
Beat up yolks. Whip the whites until soft peak stage, add whatever flavouring you want, either herbs, seasoning, or Splenda, about two teasps. Gently fold yolks into whites and make sure all is well mixed without flattening the foam too much.

Have an omelette pan warming while you do this, not as hot as for French omelette, more medium. Also warm grill on medium.

Put omelette in pan and watch it rise! After about a minute or so only, put pan under the grill, for about half a minute to one min. Must not go more than this or it's leathery, should only just set on top. Tip onto plate, sprinkle with a little more Splenda if having it sweet, and add a couple of spoons of rhubarb if you like. Eat quickly before it sinks!

I use the sweet version as a treat to control the munchies.
I find the distraction of cooking this quite good too, as it stops you just putting your hand into a bag of something! Drink a glass of water while you cook it.
