Spicy Prawn Soup

This is my fav recipe from BBC good food website, OH also loves it!!! Unfortunately we've not had it for a while because Tesco have not been stocking the coconut milk... gutted... bring it back tesco!!!

1 tbsp sunflower oil (or fry light works)
300g bag crunchy stir-fry vegetables
140g shiitake mushrooms , sliced
2 tbsp Thai green curry paste
400g can reduced-fat coconut milk
200ml vegetable or fish stock
300g medium straight-to-wok noodles
200g bag large, raw prawns

  1. Heat a wok, add the oil, then stir-fry the veg and mushrooms for 2-3 mins. Take out and set aside, then tip the curry paste into the pan and fry for 1 min.
  2. Pour in the coconut milk and stock. Bring to the boil, drop in the noodles and prawns, then reduce the heat and simmer for 4 mins until the prawns are cooked through. Stir in the veg, then serve.

Mmmm sounds so good! I've not been able to find the reduced fat coconut milk either :(
 
Could you try coconut milk? It's a bit thinner but I've seen that in Tescos with the long life milk etc etc. Or maybe a bit of dessicated/creamed coconut in water? I'm not sure of cals though, sorry.
 
You can add a bit of creamed coconut to hot water and it's similar to the milk? If you use the sachets it's fine but if your using the soap type block just let it steep then seive out the shavings.

The sachets are amazing stirred thru couscous :) horribly high cal I think tho!!! Not used for ages.

Oooh I never thought of coconutty cous cous! That sounds really nice. But yeah i guess the cals wouldn't be too great. Maybe you could pep it up with a bit of coconut essence as well?

You can make a really nice cold breakfast couscous by using boiling OJ too :) make the night before as usual (but with juice not water) then stir through some chopped fruit (mango and passion fruit is amazingin this) and chill overnight. It's really sticky and yummy!!!!

Ooops I'm hijacking the recipe with my assorted couscous's lol sorry!!!!
