I had reservations about this but made the original recipe with flaxseed and cinnamon tonight.

It was actually quite nice
. I had whipped cream, raspberries and strawbs. I mean, its not a truly sweet choc muffin but its a great little filler!

I imagine it would be nice toasted with butter as well.

Looks lovely! I really like the savoury version, toasted (in the frypan with butter) - all ready for a big dollop of butter and marmite :)
 
Looks really good! In fact I'm almost drooling right now!

I probably won't add the fruits for myself, but the picture looks good enough to eat....
I'm a bit torn as I have one egg left and I can't really be bothered to go to the supermarket. MIM or Mock Danish for breakfast?
 
In a cereal bowl:

Add about 50g cream cheese softened (nuke about 10 secs in a microwave) ...whisk it up with an egg until fully combined. Add a drop of vanilla essence, lemon juice, cinnamon if you wish and some sweetner to taste. I don't go by amounts on those as it's down to personal preference. The lemon juice is more of a thickener really. Nuke it for about 3 minutes, then let it cool down before munching away. It's an eggy texture that I can't really explain, and I think only the cinnamon reflects a danish taste. Texture is nothing like it

Edit: I'm starting to think that the more cream cheese you add, the better the texture will be on the end result. Recipes can vary anywhere between 2-4 ounces....Next time I might double the amount to 100g
