Quark??

I cannot get Quark in USA. Will fat free Philadelphia cheese be ok instead? Also is it free like Quark.
The other thing is Fromage Frais. Again, can't get it here, what about using Greek yogurt instead?
Any thoughts???

Hi, you can make your own quark with a tub of fat free natural yoghurt..

Mix a half teaspoon of salt into a 200ml tub of FF natural yoghurt.. Place a muslin cloth into a sieve/colander and place that into a bowl.. pour the yoghurt into the cloth, leave in fridge overnight (all excess liquid will drain out).. next morning, you have quark!!
