I really fancied some cheesecake tonight and I thought I do it German style with quark
Here is my recipe and I absolutely love it - It's without a base but still delicious.
Cheesecake Cupcakes (1 Syn per cupcake/ 0 syns if using sweeteners)
1 tub Quark
3 eggs
Lemon zest and some juice
6 tbsp Silver Spoon Light
(or equivalent sweeteners)
1. mix quark, eggs, lemon zest & juice and sugar/sweeteners and fill mix into 9 cupcake cases (put into a cupcake tin before)

2. Put in the oven for 20 minutes at 170 degrees
After 20 minutes they look quite big but will shrink as soon as you take them out of the oven - never mind, they taste great and I just spoon them out of case It's 1 Syn per cupcake if you use silver spoon light sugar and 0 if you don't mind the full-on taste of sweeteners (I can't stand it and I'm happy to give it 1 syn for the real taste ;-) )
