I made this dish for a potluck over the weekend and everyone loved it. This dish has always been a favorite in our house - I only had to change it a little for Dukan - the original recipe called for 3 tablesppons of butter - I omited that and just used cooking spray on my caserole dish and a bit of cooking oil in the saute pan - wiped out like we do for the gallete - it still tasted great. My hubby said he couldn't tell the difference.

What you need:
5 eggs
1 lb extra lean hamburger
1 leek
1 onion
1 cup spinach
1 tbsp Parsley
1.5 tsp Salt
.25 tsp Pepper
1 tsp Curry powder
.25 tsp Cinnamon

Start preheating the oven to 325 degrees F. Dice the onion - you should end up with about a half cup - our onions are huge, so I only use half an onion. Heat the saute pan on medium heat with the cooking oil then dump the onions in. Stir around a bit till they start to soften, then add in the hamburger and turn down to medium low and let the hamburger brown with the onions. Chop up the leek, spinach and parsley. Once the hamburger and onion are all cooked in add in the leek, spinach, and parsley. Stir around until the leeks soften and the spinach wilts. Add in the spices and stir, if it seems especially dry add a tsp of water or broth to make sure the spices get thoroughly mixed in. Once the leek and parsley have softened, turn off the heat and let set while you get the next piece ready. Slightly scramble the five eggs in a mixing bowl and spray your caserole dish with cooking spray. Then mix the eggs in with the mixture - the mixture should not be hot enough to cook the eggs - fold to get all of the mixture coated with egg, then pour into the caserole dish. Bake for 30 minutes or until solidified. Makes 4 - 6 servings.
My cookbook says to serve with yogurt (plain, unsweetened, greek style), but I have not tried it that way :)

We need a translation though - 'hamburger' is lean mince right? Beef presumably?
 
Yes - hamburger is ground up beef - I use 97% lean. I'm not sure exactly what a mince is :)

:D:D minced = ground up.

I just thought I'd make sure because 'hamburger' is what we call the finished beef patties in buns (think McD)
 
Just wanted to add - I did make this a couple of weeks back and it was delicious!! Properly followed the recipe, used about a large cereal bowl of frozen leaf spinach pieces. We (2 adults) ate half of it (with salad and extra baked potato for DH), and I froze the rest. I have just defrsted a piece and had it for lunch. Still very very yummy and survived the freezing well (Egg sometimes doesn't)! Recommended for anyone looking for some variety in the Beef & Eggs department!

*Bump* made this again yesterday, with just spinach as before and it is DELICIOUS hot or cold, munching the leftovers today!
 
Just had this for dinner - with a few cherry tomatoes added to give sweet bursts!
