baked bacon and mushroom risotto - NO STIRRING!!!

Serves 4

25g dried mushrooms
400ml boiling water
1 onion
6 rashers bacon (optional)
2 cloves garlic
350g risotto rice
875ml chicken stock or 700ml stock + 175ml white wine
50g parmesan

Cover mushrooms in boiling water and soak for 10 minutes.

Fry onions, garlic, bacon until soft (I also add peas, spinach, leftover cooked chicken, anything else lying around!).

Drain mushrooms over the pan (so the mushroom water goes in), chop mushrooms up and add them with rice and stock. Stir, cover, bung in oven (preheated to 180).

Leave for 20 mins, stirring only if you must! Add grated parmesan, stir, serve.

Please excuse my stupidity-it sounds lovely but why is called 'baked bean and Mushroom risotto' when there are no baked beans in it!! Other than that, it sounds lovely

Sorry, my bad-read it as baked 'bean' and even got a friend to double check that I hadn't missed reading them out of the recipe list!! Lol! Even so, it sounds yummy :)

How many syns does this work out as per portion?

It would just be the syns for the wine if you use it(6syns) and then about 11 syns for the Parmesan I think-and that's for 4 so just about 3syns a portion I reckon(without the wine) and 5.5 for a portion of the complete recipe! Unless I've missed something out-feel free to correct me if I'm wrong

If you count the parmesan as part of your HExA and skip the wine, it's free.
 
Couldn't possibly do that! I need my HExA for coffees and cereal! :) LOL.

So total syns for the dish without wine- as we wouldn't have any in the house anyway- 11 syns for the parmesan - work it as cause 28g is 6syns and it's 50g... That's for 4 so works out as... 3 syns a portion roughly

Or if you have the wine then add the 6syns for the wine means it's 17syns for the entire dish. That's for 4 so works out as... 4.5syns.

Does that make sense?

Sounds nice... but maybe a bit steep on synnage! LOL. I like to use my syns almost exclusively on naughties! ;)
 
Can some check out the syns of the dried mushrooms - I'm pretty sure they used to need synned.
 
I made this tonight with fresh mushrooms as I couldn't find dried ones in Asda. I still soaked them in the boiling water for a bit. I also skipped the parmisan as I've never been keen on it. It was yummy and everyone liked it, even my dad who doesn't do diet food. Thank you for sharing the recipe.
 
Help! Anyone whose online now ever cooked risotto?!

I've cooked it and it smells yummy but still has loads of liquid, should it have absorbed it all? It's back in the oven for another 10 mins.. Can someone tell me if this is right or is there too much liquid?

It should absorb most of the liquid! I've not made this actual recipe yet but maybe leave it on a low heat for longer til it does. HTH

Disaster avoided, kept it in for 10 more mins and it's gorgeous, roll on Monday night as that's when it's for.. I want it now!

Thank you, you must have been typing at the same time as me.

First time I've cooked risotto and it's really tasty and that's without the Parmesan, I'm going to add that just before I eat it, you should try it.

I'm planning on it-it's on my list! Did you use dried mushrooms or normal?

Was online but not on this thread :)

Glad the liquid went, sometimes happens so just leave it in for a bit longer.

Dried mushrooms are free (just check nothing added) and can never find them in Asda. Fresh is fine, you just don't get the intensely mushroom-y water to add.

And you could use less parmesan if you're synning it - 50g makes it really cheesy.
