Cruise PV Chicken and Butternut Curry

Dukan Ancestor!!
Inspired by one of my family's fave non-dukan recipes (with lentils, coconut milk and sweet potato!) we had this version below tonight and it worked really well.
Adjust quantities to suit, this is what I made and it fed 2 adults and 2 children comfortably (with Naans for them).

Marinate 3 diced chicken breasts in 1-2 Tb yoghurt mixed with 1Tb curry powder plus extra coriander & cardamom - adjust to suit your preferences, we need our curries MILD... The yoghurt is just there to moisten it really, not to make a sauce, as it will curdle when the meat goes into the pan.

In a large non-stick frying pan, dry-fry a large onion and a couple of crushed garlic cloves until softened and starting to brown, add the chicken and fry until browned.

Add 1/2 a large butternut squash (or a whole small one), peeled and diced. turn down the heat, put a lid on and simmer (no need to add any liquid) until the Veg has softened.

I'm sure you could add other vegetables too, I just found the sweetness of the squash was perfect with the spices.

Thanks so much for posting that recipe. It has become one of my weekly staples during the diet. I also add in cumin, turmeric and chinese spices and it is absolutely fabulous - feels like you are eating satisfying carbs!! This has to be one of my favourites. Thanks again:)
 
Yes I find butternut squash in general a godsend if you're craving something close to potato! I have it roasted, mashed, stewed...
 
This is the most delicious curry! I've made it a couple of times already and i'm only in week 3!!
Sometimes for a bit of variation i add a tin of tomatoes and/or some spinach.

Great recipe Anja! How I love a butternut squash now, never had one before Dukan!

Swede is also a really good vegetable to use with curries, it makes a really good korma base!

 
I didn't know we could have butternut squash in cruise, so thanks for that.

Is there any liquid in it to make it simmer or does it stick to the pan please?
 
I just made it again, and didn't add any liquid. If you simmer at low temp with lid on the water that comes from the squash will add enough moisture. But of course if you think it too dry when cooking, then do add a splash of water....

WOW - made this last night and LOVED it - fantastic and a change for me. Think I need to invest in a good non stick frying pan with a lid as it stuck to the bottom a little bit -LOVED it though and wish today was a PV day to have it again!! LOL x
 
I made this tonight for the first time but only had the curry powder... so added a bit of cumin as well.... i dont have a frying pan with a lid so did it in the wok then transfered to an oven dish in the oven on low and it was lovely. Hubby only gave it a 5 out of 10 but he prefers the jars of ready made sauce lol
