Butterflied Chicken with Spinach & Feta

This is my new quick & easy go-to recipe that everyone loves (even my o/h who strictly refuses to eat 'diet cr*p') ;)

Serves 1 or more depending on chicken breasts used (1 per person)

Approx 7pp per person

x1 Chicken Breast (5pp)
x1 pellet of frozen spinach (asda - super cheap & get loads more than fresh & lasts ages) (0pp)
x15g ish or 1 2cm strip from block of Apetina 10% (like feta but v. low fat) (asda) (2ishpp)

x3 2cm slices of BNS (Butternut Squash) for the 'chips' (0pp)

Veg of your choice, I do loads of broccoli & cauli (0pp)

Pop a pellet of spinach in a small cup or bowl with a few drops of water & cover with a saucer or cling film - put in microwave on full power for approx 30 seconds, stir & put aside.
Chop the desired amount of Apetina & make rough cubes.
Butterfly your chicken breast & paste the spinach on both sides laying the Apertina down the middle.
Pin together with 3 cocktail sticks & place on an oven tray (lined with a pan liner from WW or poundland - no need for oil or spray) with your chipped BNS.

Bang in the oven on 200 degs for approx 30 mins (turn the chicken half way)
Steam your veg in the microwave, serve & enjoy....:D

The Apetina is fab cos it warms up but doesnt melt so no mess & tastes lovely!
