SW when eating out in Tennessee

I am now at target and off to Tennessee in the next couple of weeks. Do really want to maintain my figure and not look like a blob in a size 8 bikini by the end! Want to make sure I have "good" food but also do want to make sure that we try lots of authentic foods that we dont have here in England and to be reasonably relaxed about it.

We will be there for 2 weeks:

We are on a low budget and most of the hotels give us "breakfast" I am sort of expecting donuts/ pastries/ sugary cereals... & free Black coffee! :D

How widely available is splenda/ art. sweeteners, do I need to take sweetex with me to the US?

When served "sweet tea" is this similar to iced tea? Is this made of sugar or artificial sweeteners?

I am concerned by the lack of veggies I believe the green beans and even baked beans are made with pork fat and lard, is this correct?

I have been reading about country/city ham, am I right that city ham has been sugared where as counry ham is salted to cure it? In that case is country ham a good breakfast choice? What other cooked breakfast choices might there be?

Are there any big surprises? Like all bran in the US has 100 syns per box or something?

Anyone have any suggestions of low syn foods or do we just forget it for a couple of weeks?
