Ideas on recipes for Scallops please!

Goodbye, to the fat lady
Hello, My brother had a turn out in his fridge as he has gone on holiday. He had given me a tub of scallops, apart from the recipe in the new Extra Easy book, has anyone any good ideas on how to cook them please? Also can they be frozen?

I often freeze scallops but only if they are completely fresh, which I often buy when I go to France where they open the shells and put the scallops in a bag. I'm fortunate that we holiday in a motorhome with a reasonable size freezer so get them into the freezer really quickly after buying. I'm not sure I would want to freeze ones that have been kept in the fridge for any length of time.

My favourite way of eating them is just pan fried with a mixed salad.

I know this thread is old I but I love scallops so had to comment! I put some in a bowl with some king prawns and marinade them in lemon juice, garlic, chilli, ginger, coriander (fresh is better) and spring onion. Leave for about an hour or so then chuck in a hot wok and heat on high until they are cooked through, them I have them hot over a salad. Yum!
