Pineapple ideas!

Hi there!

I have two enormous pineapples sat on the side which are ripening up nicely. Does anybody have any ideas for low syn pineapple desserts that might also appeal to people not following the SW plan? I'm at home with my parents and I'm trying to stop my mum making a pineapple upside down sponge, lol! xx

Sorry Hun I don't . Probably because as soon as it is cooked it is synned.

I generally just eat it on it's own or in a fruit salad or mixed with natural yogurt.
