Meal ideas please - not much of a cook!!

Hi Lite people,

I'm in transition from Total to Lite. I'm not much of a cook and after Total I'm out of practise planning and preparing meals.

I'm in danger of sticking to tuna salad and chicken and veg. I know I will get bored easily, so quick and easy meal ideas would be great. I don't eat red meat but do eat chicken and fish.

Bless you. Here's some of my fave meals - sorry they may be a bit boring, I tend to make things that are easy to take to work! Hope they help inspire a little.

Tuna Nicoise salad
Tuna, egg, green beans, salad, balsamic dressing

Cottage cheese salad or left over roasted veg
(I like this as it makes me feel like I'm having naughty cheese but it's fine, 250g low fat pot- loads)

Chicken curry (traditional north indian, not spicy but tasty)
Make a masala base out of chopped onions, garlic, ginger, salt and coriander powder. Add tinned tomatoes and simmer until it reduces.
Add small bit of cinnamon bark, few cloves, tumeric powder. Add chicken allowance and any veg you like. Cover with water and bring to boil. Simmer for as long as you can. Then add a tablespoon of low fat yoghurt and season to taste. (Sorry haven't given precise spice measurements but message me and I'll try to send to you if you're interested).

Chilli con carne
Made with lots of garlic and your allowance of lean mince and kidney beans.

Tonight I'm having a chicken breast wrapped in bacon, with lots of green veggies.
