Mushrooms??? anyone got any good recipes please?

does anyone have any good mushroom recipes please. i went to market and got a huge carrier bag of mushrooms for £1. they are lovely but i need to use them over the next 4 days or they will start to waste.

i borrowed this recipe from bee to start me off. be very grateful to anyone who can add to the list

Mushroom and Rice One-pot
Saw this recipe in 50 Budget recipes which came with Good Food magazine. Tried it last night and it was yum!

200g basmati rice
1Tbsp Olive oil
1 Large onion
2 tsp fresh rosemary or 1 tsp Dried
250g Chestnut mushrooms quartered
2 Red peppers
400g tin chopped tomatoes
425ml/3/4 pt vegetable stock
Handful parsley

Heat oven to 190C/Gas5
Rinse rice under cold water then drain
Heat the oil in a casserole dish and fry the onion til soft. Stir in the rosemary and mushrooms, fry briefly.
Add the rice, coat it in the oil and add the peppers, toms, stock and some black pepper.
Bring to the boil, stir, cover tightly and bake for 20-25 minutes. Scatter with parsely to serve.

Serves 4

ok, just found another one for creamy mushroom soup. its from the morrisons website and can easily be adapted.

  • frylight
  • 200g shallots, peeled and finely chopped
  • 500g mushrooms, wiped and roughly chopped
  • 250g potatoes, peeled and diced
  • 1 litre vegetable stock, made from 1 stock cube
  • 1 tsp reduced salt soy sauce
  • 175g low Fat Soft Cheese with Garlic & Herbs
Method


  1. spray the oil in a large pan. Add the shallots,
    mushrooms and potatoes and cook, stirring,for 5 minutes.
  2. Pour over the stock, add the soy sauce and black pepper and bring to the boil. Reducethe heat, cover and simmer for 20 minutes.
  3. Scoop out a third of the cooked mushroom mixture and set aside. Blend the rest using a hand-held blender until smooth.
  4. Add the reserved mushrooms then stir in the cheese, heating until melted, giving a creamy texture.
 
I don't have an exact recipe but if you 'fry' mushrooms onions and garlic until soft, add extra light Philadelphia, hex a and possibly syns if you like really creamy, and paprika you can make a really nice mushroom stroganoff, serve with rice!!! Yum!!! I'm veggie, but I guess you could add meat too if you like! X

I've always used Mushroom risotto recipe - Recipes - BBC Good Foodin the past, often with some chopped up bacon in it

shouldn't be too hard to use less oil and no butter - but I think you'd need a bit of oil. I've frozen it before as well. It's not as good as first time round, but its fine if you add fresh parmesan.

Yes I do and a mushroom Tagliatelle recipe. I will post them separately for you in a bit (I can then locate them easily) if that's ok??

I love mushrooms so much I usually get a catering crate at the cash n carry when I'm there. I'll be having a go at some of these recipes, Thanks very much!
 
Low syn Creamy Garlic Mushrooms

2 Cloves garlic finely chopped
1 punnet closed cup mushrooms chopped into quarters
1 tbsp Philadelphia Light (28g 2 syns)

fry the garlic in frylight in a medium saucepan on low heat for about 5 minutes, constantly stirring.
Then add in the mushrooms, spraying with more frylight and stirring until browned.

off the heat and cover the pan with a lid and let them "sweat" for 5 minutes.

Then add the Philadelphia Light and mix it through the mushrooms until melted.

toast a piece of WeightWatchers Thick bread (1/2 HEB or 3 syns), spread with a Laughing Cow Light Triangle and then put the mushrooms on the toast and pour the "sauce" in the pan on top.
 
I love this one with egg fried rice - free on green & EE:

Spiced mushroom sauce

FREE

fry light
1 onion chopped
1 red chilli chopped
1 tsp minced garlic
1 tsp minced ginger
1 bay leaf
1/2 tsp mixed peppercorns ground
1 tsp ground corriander
1/4 tsp tumeric
6oz closed-cup mushrooms sliced
1/4 pint stock made with chicken bovril
4 tbsp v. low fat natural fromage frais
salt & pepper
chopped coriander (small handful)

put all onion chilli garlic etc.. in a pan for 5 mins. stir in mushrooms and stock, bring to biol and simmer for 5 mins. stir in fromage frais and heat for 2-3 mins - do not boil. Remove bay leaf season and serve.


 
Serves 4
Free on green & EE (1 HeA for the cheese)


Mushroom & Lentil loaf

125g dried green lentils
250g mushrooms sliced
1 onion chopped
2 cloves of garlic crushed
1 egg beaten
112g grated mature cheddar
1 tsp of marmite
1 tsp of dried mustard powder
Pinch Mixed herbs
Salt & pepper to taste


Boil the lentils for 20ish mins & drain. Meanwhile fry the onion, mushrooms & garlic in fry light until cooked.
Mix everything up in a bowl (save 28g of the cheese for topping) Spray a loaf tin with fry light & pour the mixture in. Sprinkle cheese on top.
Bake in the oven for 30mins at 200.
Can be frozen.
