Puddings Lady A's Nutella Cupcakes

Hi everyone I made these a week ago and thought I'd share them with everyone here as they taste pretty yummy....Ps the recipe has been inspired by the 12 syn sponge cake thread :)

Lady A's Nutella Cupcakes Recipe:

Cupcakes alone work out to 1/2 syn each & nutella is 4 syns per tbsp so 12 + 8= 20/24 = less than 1 syn! :confused:

Ingredients:
6 eggs
2oz self raising flour
couple drops of vanilla essence
2 tsps baking powder
14 tbsp granulated sweetner
Method
Mix the eggs and sweetner and vanilla essence in a large bowl with electric whisk, beat until it triples in volume (about 10 mins)
Sieve flour and baking powder and fold into mixture.
Share between 24 cupcake cases and bake at 200C for about 10 mins (Keep an eye on them)

Topping:

Melt 2 tablespoons of Nutella in the microwave for 30 seconds and top your cupcakes with them.....Only 1 syn each so you can have a couple with a cup of tea or some ice cream. :)

Made 36 last night and they are lovely! I used Splenda, it's the only thing that's bugging me as I'm not sure I like the taste so much any more... Also, a tip - as soon as you pour them into the cake cases, put them in the oven... We only have a small oven so I had to do 12 at a time and the second and third batches have a niiice little omelette at the bottom where the eggs have set!

Uh oh...may be your baking tray was still warm from your first batch? I'm lucky as my oven is big enough to fit them all in. Glad you enjoyed them though :)

Can i ask...... do you separate the eggs and beat the white til stiff like you do with the chocolate cake???

Ooh these sound lovely and I have a new jar of nutella in the cupboard :) Need to buy some eggs but will have a go at the weekend. Thanks.
 
Mine didn't work :(

Came out of the oven looking good but sank within a couple of minutes so I have flat eggy things, nothing like cake! They are less than 1cm thick.

Uh oh! Did you use self raising flour & put the baking powder in? I've made them a few times and they keep nice n fluffy for a few days. :)

Yes, I used SR flour and put the baking powder in. I missed out the vanilla essence as we didn't have any but that should have only affected flavour. Having said that, they would taste better with it in I reckon.

I think I put them in a draft after getting them out of the oven and like little soufles they sank :( Oh well. Might try again sometime and not do that!
