Tomato, pepper and lental soup lush!!

Back to basics!
Was going to make carrot and coriander soup for lunch only to discover my other half had donated the carrots to the local horse!! So i threw a few things in a pan to take a chance on making it up!! It was totaly lush!!

200g red lental's
2 tins chopped tomatos
2 peppers (i used yellow but i suppose any would be ok)
1 onion
3 veg stock cube's
1/2 tsp chilli powder
2 tsp dried basle
1 tsp paprika
2 pints water
salt + pepper to taste

fried the onions and peppers in fri light till soft and golden put all the ingredients into a large pan bring to the boil then simmer for i hr blitz together and enjoy!! So easy and so good! I enjoyed mine with a tsp of parmazan cheese mixed in mmmmmm:d:d:d:d:d:d:d:d
 
HIya, were the red lentils dried or tinned.Never used them before, dont even know what they taste like but quite like the sound of this soup. I dont like peppers much but when things are in soups they often taste different. Thanks for the recipe
 
mmm im getting lentals tomorrow so will give this a try

hi dried lentils just bought them because they are super speed foods so i thought i would try them, they just seemed to thicken the soup rely well, so will use them in all my soups from now on!:D
 
Just a word of warning ladies I tried the red lentils in a soup and yes it was delicious but the wind was awful, sounded like a docker lol, will try again but reduce the amount of lentils I use. xx
