Very Low Syn Alternative to Quark?

Hi. We're having a party at group on monday and I've decided to make some mini cheesecakes. I've tried making cheesecakes with quark in the past and I really can't get them to taste nice, I can always still taste the acidic-y, fakey aftertaste from the quark.

I've tried them with Ex. Light Philly and they turn out lovely, but a) it's pretty expensive to make so many, and b) ideally I wanted something even lower synned. Does anyone have any ideas for a low syn or syn-free alternative to quark that actually tastes nice?

(It seems I can't disguise quark as well as most of you can. I tried it in carbonaras, cheesecakes, etc. but I can always taste that quark-y aftertaste! :()

I agree with you about the quark! I made up some quark with artificial sweetner and choc options and vanilla essence and they are in my fridge now, didnt taste very nice, just hoping today they may taste better!!! Its the sour taste still coming through which I dont like.

Have you tried this using Total 0% instead of the Quark? It's a little more expensive but still free on all plans, once I tried it I couldn't go back lol!

i was going to say 0% greek yoghurt its lush and takes on any flavour, i have it as a pud 1tsp of lemon curd with a handful of raspberries and 1 tsp of nuttella with chopped up orange segments but its tastes better than cream in my opinion, im using it in my recipe to bring in this week , mini meringues with 0% and lemon curd(home made syn free) and choc mini meringues with0% and raspberries on top cant wait to try them!!

I do like greek yoghurt actually, but would it work in place of quark? I mean because it's yoghurt and not a soft cheese. Also, it's a baked cheesecake, so is there any chance of it curdling while it's hot? I don't do much baking, as you can tell. Hehe.

I saw this a while back actually and wanted to try it, but I have a tried and tested recipe that I know works for me. I'm a terrible baker and most desserts just don't turn out right when I try them. So for such a big batch, and for an occasion, I wanted to use the recipe I have and just adapt it slightly.

I've got this saved to try another time though, when it doesn't really matter if it goes wrong :p

Have just made a strawberry cheesecake with quark and it is a baked one. It seems quite firm, one member of our group made it for a taster session. It was soooooo lush, I have made it today without the biscuit base though for less syns. Will let you know how it turns out. I have worked it out without the biscuit base the total syns would be 3.5 syns so for a good portion about 1 syn! Going to put my strawberries and jelly on top now. Wish me luck. Just need something sweet today.

Hmm not lush when I did it. So disappointed, think I needed to add extra sweetener as it wasnt sweet at all. Ate all my portion though, hubby just said sorry love not my thing this!! Oh well will try once more, worth experimenting if I get it right for a low syn pud.

That seems to be my problem when I use Quark, but it doesn't matter how much sweetener I put in, that odd tang is still there. And I agree, the trial and error is worth it until you find a good one. I usually half or quarter a recipe and make a small one if I'm trying it for the first time, so there's less waste if it's gross :p

I've made a non quark cheesecake this weekend from a recipe suggested on here. It uses cottage cheese and natural yog, with half spoon sugar and wholemeal plain flour plus whatever fruit you want to add. Works out at 1 syn a slice. It's in the recipe section fairly near the top ad I've just posted how nice it was :)

I think quark is very different depending on the brand you buy . Morrisons is almost like fromage frais where tescos and asda is somewhere between ricotta and cream cheese. I like them all but they are different and they never used to be.

I agree, I was surprised at the difference between the Asda quark (thick and philly like) to the sainsburys one (fromage frais like and gloopy) strange.
