Recipe for peri-peri chicken and sweet potato mash

Hi all,
I found this original recipe in Jamie Olivers 30 min meals cookbook and have adapted it SW-stylee and it was quite nice so thought I'd share it incase anyone would like a go.

(I apologise in advance about lack of precise measurements, I just go by hand)

Ingredients;
Chicken breasts (skinless)
1 red onion
2 cloves of garlic
1 red chilli
a 1/2 teaspoon of Paprika
5 tablespoons of White wine vinegar
Basil
Coriander

Sweet potatoes
Feta Cheese

Method;

Add to a food processor the red onion (quartered), the garlic, the red chilli (keep in as many seeds as you like, i take some out so not too hot), the paprika, white wine vinegar, few stalks of coriander, few leaves of basil and some water to loosen. Whizz it all up untill it is quite a loose consistency.

Fry the chicken breasts (cut into strips for quickness) in fry light till they are slightly brown on either side. Add the peri-peri sauce to the pan and pop in the oven for 20mins ish untill sauce has reduced and the chicken is cooked through.

Cut up the sweet potatoes and boil them in a pan of salty water. Once soft enough to mash, drain and mash. Add in some chopped coriander, salt and pepper.

When serving crumble some feta cheese over the top of the sweet potatoes.

When chicken is out of the oven serve the extra sauce with it (its lovely when mixed with the sweet potatoes!)
