Green Day Spicey lentil and root veggie stew

Right this is something very quick easy and cheep i knocked up yesterday. Its free on green and i assume EE though not sure one red :D

You will need
1 stew pack or 2 onions, 3 carrots, 1 or 2 parsnips and a swede
1 can of tomatoes
a couple of handfuls of lentils(i used red no soaking needed)
500 mil of veggie stock
spices to taste. I used a hot curry powder but really any Indian or Moroccan spices or perhaps something more subtle and used Mediterranean herbs :D

Very simple spray a large pan with a couple of squirts of fry light and add your chopped onion and fry and move constantly and then add about half a glass of water and steam fry gently on a low heat for about 5 mins covered.Always keep and eye on the water if needed add a little more.

Peel and chop the remaining veg and make sure its nice big chunks of it too and prepare the stock

Once the onions have softened add you spices or herbs and mix well and let it cook for a few mins.

Simple add the chunky veg, stock and tined toms to the pan, bring to the boil and then throw in a few handfull of red lentils and then bring to the boil and then turn down and simmer(covered) for about 40 mis or until the veg is lovely and soft but not mush.

Nps its really nice, proper comfort food but without the calories :D. Have a fair bit in my freezer as the stew packs were cheep at the time(and there cheep anywho) you could prob blend it up for a thick soup if prefered(thoguh will prob need more stock). Might get some out for tea tonight
