BNS & Red Pepper Soup - gorgeous.

I made the BNS and red Pepper soup at the weekend and it is sooooo easy to make and tastes devine - the kids kept asking for more!

I's so easy just peel deseed and chop 1 BNS, chop 1 onion (I used 2 red onions) and deseed and chop a red pepper - add then to 2 pints of veg stock (I crumbled 1 veg oxo cube in) then just simmer for 20 mins, if you prefer you soup thicker either add less water or simmer for longer. Season with pepper and mixed herbs then blend.

Enjoy.

Isn't it all that - I had it for my lunch today with some melba toasts to dip in instead of have crusty bread and it did the trick.
 
I made the exact thing early last week and i loved it! it tasted really creamy too!
 
I've just made it with normal onion and it's no where near as nice, can't believe how much difference there would be in taste just by replacing 2 red onions with a large white one - sticking to red onions from now on.

mmmmmmm sounds lovley :)

I swear by it, best thing is it's free. I like mine thick so I don't add as much water as your supposed to - hope you enjoy it.
 
lol i must be the only person about who didnt like the bns soup. i do carrot and corriander its lovely.

lmso, as long as you've found one that you like, thats the main thing - i do find mine all taste slightly different depending on the size of the veg I use - enjoy your carrot and corriander one.
 
Try adding a teaspoon or two of cumin to the bns soup.... makes a world of difference!!

Have you tried sticking the peppers in the oven for half hour sliced in half to bring out the sweetness a bit more?
