Butternut squash risotto

I thought I would share as this is so good and filling and just 4pp per serving (4 servings)

Low cal spray
150g risotto rice
150g butternut squash cut into cubes
100g mushrooms sliced
6 spring onions sliced finely
1 clove of garlic crushed
2 stock cubes chicken or veg melted in 1ltr boiling water
2 laughing cow light triangles

Heat pan over a medium heat and add a couple of sprays of low cal spray, add risotto rice and stir for 1-2 mins until rice is transparent but not browning.

Add bns, mushrooms, garlic, s.onions and stir in for 4-5 minutes.

Add stock a ladle full at a time until all of the stock is absorbed and the rice is tender (18mins)

Throw in the l.cow triangles and stir until melted and risotto is creamy.

Serve! Yummmmmmy
 
Oooh thanks for this, risotto is my favourite ever thing but I'm so used to adding shedloads of butter and cheese I haven't dared think about making it since starting pp.

Will give this recipe a go!
 
might have to try this recipe!!
 
ooh sounds yummy, bns rissotto is one of my favs, so nice to have a lighter version :)
