You don't have to use syns on things like chocolate - what about olive oil, mayonnaise, pesto, curry paste, non syn-free yoghurts, creme fraiche, extra bread or cereals, coconut milk, butter, avocado. You can use your syns to add to the variety and type of meals you have.
Some people do find that if their losses slow down or even stop if they take too few syns. Others find they need to cut back on syns as they get nearer to target and if you are using hardly any to start with then you have nowhere to go.
