Curry Heaven - Recipe Problem

Hi there

I am just starting out on EE and have bought the Curry Heaven book. Last night I attempted to make the Shahi Murgh and followed the recipe to the letter. I was a little dubious about cooking the yogurt for so long, and as expected, I found that the yogurt separated within minutes of adding it to the pan (and it was on the absolute lowest setting). Has anyone had the same problem/have any hints as to what I may have done wrong?

Did you add it straight from the fridge? It's the adding something cold to something hot that makes it split. It can sometimes help to bring it to room temperature and allowing the dish you are cooking to cool before combining the two.

I cook my curries in yogurt quite a bit and find that it doesn't separate if I keep stirring it until it mixes in with the other ingredients in the pan. Fat free yogurts tend to be a bit watery but if you keep stirring it over a medium heat then it shoud turn into a creamy sauce.

I found that if you stir yoghurt in at the end of the cooking that it doesn't split and still tastes as good
