Cruise PV Baked chicken Masala

Dukan Ancestor!!
I made this last night and it was delicious and more than enough for two (with some rice though, for Conso PV+carbs meal)

  • 2 chicken breasts, in large chunks
  • 5 ts curry powder (I added more ground coriander and cinnamon)
  • 1 ts turmeric
  • 6 TB low-fat yoghurt
  • 2 large red onions, quarters or eighths
  • 6 tomatoes, quartered
  • a large handful fresh coriander leaves (to serve)

Marinate chicken in 2tb yoghurt mixed with 2ts curry powder (to taste) and turmeric and seasoning, for a few hours if you can.

Heat oven to 220C/200C Fan

Toss tomatoes and onions in a shallow baking dish with remaining curry powder, then nestle in the chicken pieces.

Bake for ~25mins until chicken is cooked and veg are soft and turning a bit brown.

Scatter over fresh coriander and serve with remaining yoghurt (and brown rice)

I'll be making this again, you can also use chicken pieces instead of breasts, but increase the cooking time to nearer 1 hr I think!
