Chicken dish 3pp

Hi guys. I found a rather strange sounding recipe and have just given it a go. At first I was put off by the name coca cola chicken (sounds disgusting doesn't it) but curiosity got the better of me and I put the ingredients into the recipe builder and when it came up with 3pp per serving I gave it a go.

Ingredients serve 4

400g raw chicken breast chopped into strips
1 330ml can if diet coke
6 tablespoons of passata
1/2 an onion finely chopped
Dash of Worcester sauce
Chilli flakes (optional my own added extra)

In a wok Soften the onion in some fry light and then stirfry the chicken until cooked.

In a jug mix the can of coke, passata and Worcester sauce ( I also added some chilli flakes as I like my food to have a kick but optional)

Pour the cola mixture over the chicken and let it simmer until it reduces down to a sweet sticky sauce.

I served this with 60g (dry weight) basmati rice 6pp and some broccoli 0pp and it was a huge plateful for a total of 9pp!

Don't be put off by the name! Give it a go!

I keep meaning to try this! It's a nigella lawson recipe although she uses full fat or cherry cola (obviously- she doesn't do diets!!)

Enjoy everyone. I was so surprised how tasty it was. Think I'll add a bit more chilli next time though as I love spicy food. :)

Just wondering what is the recipe builder?
Sorry if its a really obvious answer :eek:
 
If you are an online user there is a recipe builder application were you type in the weights of all your ingredients and it gives you the total points value, you then say how many portions and it converts to propoints per portion! It's fab.
 
Great idea I hadn't thought of having it with bns chips. I still have 3 portions stored in the freezer so that's tomorrow night's dinner sorted! Who needs takeaway! :)
 
Yeah I live alone so I always have 3 portions of most things to freeze! Hard part is remembering to take them out of the freezer before going to work! Lol :p
 
What are bns chips?
 
Butternut squash chips. Skin and desired a butter but squash, cut into chip size pieces, spray with a squirt of 1cal oil, sprinkle with paprika (or something to your taste) and roast. 0 points apart from the oil. Delish!

I love the sound of this, so I'm going to try this out this week. I'll have to keep the ingredients from the hubby or he'll never eat it!
