Made this last night, and it was lovely.

The mince base can be used for anything, just over pasta, lasagne, canelloni anything pasta based really!

I don't measure anything so just use up what you have!!

Serves 4

Packet extra lean lamb mince (If can't get extra lean just cook and rinse that is what I do anyway!)
Onion
Yellow/red pepper
Courgette
Garlic
Tin chopped tomatoes
Carton of passata
Salt, pepper, paprika, worcester sauce
Pasta
2 ounces cheese/ 56g ( works out as about 2 HEA)
Breadcrumbs ( You can use 6x slices danish ww bread for 2 HEB)

So each portion only uses
1/2 HEA
1/2 HEB

1. Fry light a pan and fry off your mince until brown, rinse afterwards if you want to get rid of the rest of the fat.
2. Chop or food process your onion, garlic, pepper and courgette. You can either do it fine or chunky up to you how you like it! I like it quite fine so I do it in the processor.
3. Soften your veg in a pan and then add back in your mince.
4. Season with salt and pepper, paprika and worcester sauce.
5. Add chopped tomatoes and passata
6. Simmer for about 15/20 minutes until thickened up a bit.
7. Cook your pasta and mix in with your mince, pop into a dish.
8. Mix your breadcrumb and cheese and sprinkle all over the top of the dish.
9. Pop in the oven until the cheese has melted and breadcrumb has browned.

Really tasty and made 4 big portions!!
