Whats for lunch?

Todays lunch is

Escalavida from the World of Flavours cookbook (My Mother in Law got me it for Christmas)

Its a warm roasted vegetable salad with aubergine, peppers, onion, courgettes, tomatoes, garlic and lemon juice.

It smells lovely!

I had homemade vegetable soup with a slice of WW bread (1/2 HEXB) made with my sparkly new hand blender!!!
Then for desert i had a mullerlight and alpen light bar (1/2 HEXB)

I have a cold at the minute so warmed me right up!!
