chunky chick :-)
ive defrosted 400g ex lean mince out of the freezer and dont really know what to do with it :-(

i was gonna brown it, chuck it in the slow cooker with loads of carrots and onions and chop up 2 potatoes and make a kind of stovies casserole but i pointed it and there is 20pts in the whole thing, and i cant see it being a huge amount out of 400g mince?

its cold, and its snowing again :-( i want something nice n warm!

I would make a spicy Cottage pie, then divide it into portions and freeze it with the points value written on the top for easy reference later when u need a quick meal. I make this a lot and everyone that has tried it loved it and asked for the recipe. Here's how I make mine......

Lean Minced Beef.
1 sliced onion
1 Tin of WW Baked Beans
Salt
Freshly Ground Black Pepper
Chilli Powder to taste
Leftover Gravy, or Gravy Granules to thicken

In a Saucepan saute the onion until soft and just turning brown. Add the Mince and cook through. Add the Tin of WW Baked Beans and Gravy or Gravy granules. Add the Chilli powder, Salt and Black Pepper and cook slowly for about 10 mins. Taste to check for enough seasoning and add more Chilli powder if you need a bit more kick.

Divide into freezer containers and top with Mash made with low cal marg.

Write the points on top.

This is a lovely winter warmer and easy peasy to make :)

400g of mince does a spag bol, shepherds/cottage pie or mince casserole for 6 in my house. and one of those portions is MAN sized for my 16 year old gannet. Add in extra veggies to eke it out further. Broccoli and cauliflower in the casserole or cottage pie will go well.
