Why is Pork off the menu?

Still waiting on my diet and receipe books (come on Amazon!!), so wondered if anyone can let me know why pork is not allowed (when we are allowed low fat bacon and ham)?
 
Simple: because we are NOT REALLY allowed low fat bacon OR ham really unlews it's less than 4 percent fat max...

p20ff: he discusses meats as a source of protein: "... pork, which is even fattier [than mutton or lamb], is not rich enough in protein to belong to the elite group of essentially protein foods."

and for ATTACK pp 61 he says: " Low-fat, lean ham with any rind off. For some time now low-fat ham and smoked turkey or chicken have been available in supermarket. They have a fat content between two and four percent. This is far below both lean meats and the leanest fish...."

And he recommends them.

My comment - the consensus on this board is that they can contain added carbs (sugar, starches) if you're not careful and of course they're high in salt too which you're trying to avoid...
