Mushroom Soup

Inspired by a very large reduced-price box of excellent mushrooms purchased at Morrisons the other day!

  • 2 sticks celery, finely chopped
  • 1 onion, finely chopped
  • 1 potato, diced
  • 2 small or 1 large carrot, finely diced
  • small piece of fresh ginger, peeled and finely chopped or grated
  • Frylight
  • 250g mushrooms, chopped
  • salt and pepper
  • 1 tablespoon Knorr Touch of Taste Vegetable concentrated liquid stock
  • boiling water
Put the onion, carrot, celery, potato and ginger in a saucepan with some Frylight and cook over a medium heat, stirring, until the vegetables are starting to soften and colour.

Add the mushrooms, stock, salt and pepper to taste, and cover with boiling water.

Simmer for about 45 minutes, until all the vegetables are soft. Remove from the heat, and blitz with a hand blender until it is the consistency you like (I prefer thick and lumpy!). Adjust the seasoning, reheat, and enjoy!

This made two big bowls - lunch yesterday and today.

Obviously, you can add or subtract anything you like or don't like from this recipe. Also, use the stock you prefer - I like the Knorr concentrate as you can use just as much or as little as you like; also I think it has the best taste.

sounds good, i will try it and maybe add vff fromarge frais at the end to make it creemy
 
Just made this for lunch today and taste lovely - I made a couple of tweaks, I left out the ginger and celery, used leek instead of onion as I didn't have any, an used a couple of new potatoes and Kallo chicken stock cube....will definitetly make again. :D

I use this recipe mostly - it's very quick & tastes lovely. :)

Ingredients......

1white onion finely chopped
2 cloves garlic crushed
1 small potato finely diced
Punnet of mushrooms (I put in what I've got)
Veg or chicken stock cube
Boiling water
1/2 Tsp Paprika (Or your choice)

Method.....

Soften onion potato and garlic in fright until soft and translucent.
Add mushrooms and fry for a couple of minutes.
Add stock cube and water, stir in paprika and simmer till veg is soft.
Blend until smooth.
