Recipe ideas for red onions??

Hi all. I've a surplus of red onions and wonder if there are any ideas on something like a cheese and onion flan etc. I also have reduced cheddar, cottage cheese and quark - obviously the filling is what I'm after and not pastry.

Main objective is to use the onions though. Just about to use a couple now and batch up some chilli and also a shepherd's pie. Keep the old freezer topped up with winter earners!

I haven't tried it yet but Why_d gave me a recipe for stroganoff. I think it's something along the lines of chicken/quorn, red onions, quark, paprika, mushrooms and chicken stock. If you search his page on food diaries (he is pretty good about updating it daily so you should find it fairly easily) you'll find it somewhere around the last page or so. I'm planning to try it this weekend !

I copied this recipe from somewhere but unfortunately didn't keep a record of who originally posted it so apologies in advance if it was someone on here! I haven't got round to making it yet but I remember that loads of people tried it and everyone liked it!


Onion Chutney
1kg onions (ı used red onions)
200ml of balsamic vinegar
300ml of apple vinegar
couple of cloves garlic
salt and pepper
5 dessertspoons granulated sweetener

I sliced the onions up small and reasonably thin, added the vinegars and sweetener and then simmered for approx one hour until the vinegar had evaporated and formed a thick sticky sauce. I then transferred into sterilized jars and sealed them
 
get a jar and peel, chop and dice them up..
stick them in the jar in the fridge and they keep for ages..
I used some the other day that I put in about 3 weeks ago and still firm and fresh..
 
Update:

I've now batched up enough chilli, shepherd's pie, cheese and onion flan and vegetable soup (all SW style) to feed an army.

So versatile them little eye-waterers lol
