Was a bit stuck what to make on my fishy week as all I had was a tin of tuna and I'm not the biggest fan of tuna. So made this and completely made up for neglecting my speed foods this week - a whole 5 full speed food portions go into this!
Speed-tastic Tuna Pasta
Serves 1 / 1 syn per portion
Ingredients:
75g pasta (I used Fusilli)
Handful green beans - halved
1 small red onion - sliced
Half chilli - chopped
1 clove garlic - crushed
Half red pepper - chopped
1/3 bottle of Passatta or half tin chopped tomatoes
Tin tuna in brine (actually used about 2/3 of a tin)
7 olives in brine - 1 syn
Method:
Cook pasta as per instructions on the packet. For the last 5mins, add the green beans.
Fry the onion, chill & garlic in fry light for a few minutes.
Add the pepper and fry for a few more minutes.
Add the passatta, and tuna and olives and season to taste.
Toss the pasta into the sauce and serve.
Obviously if you left out the olives it would be syn free
