lunch ideas on PP

Hi all,

I am struggling with lunch ideas for pro points!

I work in an office with a microwave and used to jackets pot and beans, but now jacket pots are so high!

So has anyone got any novel ideas for me? Or what are you having for lunch in your offices across the land?

WW bagel with 30g philly lite and 50 g smoked salmon for 6
or 0 point soup with tuna salad and fruit for 2 pp (if you want a heavier dinner
 
Today I had 175g pasta (5pp) served with roasted veg and a homemade tomato sauce with 15 black olives (1pp). Everyone thought my lunch smelled lovely.
I roast a large tray of veggies at the weekend and portion and freeze them. I do the same with the sauce. Garlic, onion, stock tomatoes herbs and whizz. Portion and freeze.
Reheat the lot in the micro. You get a large portion for 6 pp.
 
I'm struggling a bit with this too, I just get bored easily too of the same thing...this week I have had:

WW wrap with ham, a cheese triangle and tomatoes. Packet of skips.

0 point soup, 2 slice wholemeal with 2 light babybel on them on the side. Yoghurt.

My problem is as a busy mum of 2 little ones as well, anda partner who works long hours, it's hard to find time to make stuff in advance too.

Will prob have beans on toast some days? Am going to be checking what tinned soups are like points wise too and get some of those as a fall back for grabbing to take to work!

I bought a John West Tuna Light Lunch thing today (lime and black pepper) - sounded nice I thought and only 6pp....omg it was yack. Wouldn't buy that again!!

Will be interested to read other ideas on this thread too!
 
I made a yummy 0 point vegetable chilli last night after a recommendation on here. You could have a huge portion of that on top of a jacket spud and just point the spud. It's really filling.
 
I usually have a pack of 6 melba toasts - 2pp per 6 slices, 3 laughing cow extra light triangles - 1pp per 3 triangles (spread half of one onto each melba toast) top each one with a slice of WW ham - 2pp for 3 slices - you only need 3, cut them in half and there is more than enough for the to of each melba toast. Then i have loads of cherry toms and chunks of cucumber and some red grapes out the fridge so theyre crunchy and cold! And then one of those caramel wafers for 2pp. So lunch for me is 7pp and it usually lasts me til tea time :)

Yeah, cooked pasta. Usually when I have spaghetti for tea the night before, I always make more and portion and freeze leftovers. I bung everything in the freezer, take out the veggies, sauce and pasta the night before, stick in a tupperware dish and take to work, reheat in micro.

I also make veg curry, and as you count curry powder now, I count it as 1 pp.
 
Yummy!! How do u make it!

Just chop up a load of veg - I used onion, celery, fennel, courgette, peppers and aubergine - then saute it all in a big pan with a splash of water till softened a bit. Chuck in some chopped garlic, mixed herbs, pinch of chilli flakes, a splash of worcestershire sauce and a tin of chopped toms and jar of passata, crumble in a veggie OXO and simmer it till it's thick. Taste for spice and add a few more chilli flakes if you like it hotter.
