Ohh I found the perfect way to do SW chips and they're yummy and crisp and not ... bloated like they used to go.

1 x Jacket potato - pop in the microwave for 5 minutes (if you using 2 potatoes I pop them in for 6)

Frylight up your roasting dish/baking tray

When the potatoes are out cut them up (they will fall apart if you're heavy handed) but the texture is what makes them crispy.

Pop them bit by bit on the tray. Frylight over the top and throw abit of salt over them and throw them in the oven.

They're sooo much nicer than store bought/chip shop chips! (especially with salad cream and cheese on top!)
 
This is how I do mine. I much prefer them as wedges with the skin on. Yum!
